Mark Ellman Chef Owner of Maui Tacos
When Mark Ellman opened a small courtyard restaurant named Avalon in Lahaina, Maui in 1988
he created a foodie following . He was joined by other great chefs, Roy Yamaguchi, Alan
Wong, Peter Merriman, Beverly Gannon, George Mavro, Phillipe Padovani, who also created
what is now known to be called, Hawaii Regional Cuisine.
One of Marks signature dishes, Chili Seared Salmon Tiki Style, graced the cover of
the New Cuisne of Hawaii Cookbook. Where Mark with eleven other chefs introduced
themselves as the founders of Hawaii Regional Cuisine.
After eleven years Mark sold Avalon, and is concentrating on Maui Tacos a restaurant
dedicated to Fresh Maui Mex cooking at very affordable prices. Maui Tacos features Fish
Tacos, Grilled Steak and Grilled Chicken among a plethora of vegetarian dishes along with
its salsa bar featuring five different salsas including a smoky chipotle salsa to a
sublime Pineapple salsa, and cilantro, onions, limes where you can fill up as much as you
like.
The Steak, Chicken and Fish are marinated in a Pineapple Lime marinade before it is
grilled and hand chopped for the Tacos and giant Surf Burritos.

Chef Mark Ellman of Avalon and Maui Tacos has opened an intimate neighborhood Italian
café with dining al fresco in the heart of Lahaina. Located in Dickenson Square, Penne
Pasta offers thin crust pizzas, pastas, salads and nightly seafood specials, with nothing
over $13.95.
Marks home style cooking here is reminiscent of the osteria cafés of
Rome,Italy, light, fresh and distinctive.
A wide variety of pastas, Pasta Pomodoro, Putanesca, Clam sauce, Bolognese ,and the
signature, Baked Penne, to name a few.
Nightly specials like Mahi Mahi, and Lamb Osso Bucco.
Beer and wine, espressos and cappuccinos nicely round off a memorable Maui meal.

and now in 2005 Mark and his wife Judy have opened, Mala, an Ocean Tavern. At 1307 Front
Street overlooking Mala Wharf right on the waters edge. A small 70 seat Ocean tavern
featuring a Right on the Water Lanai Cuvinet of eclectic wines and a full bar,
featuring Mai Tais and Mojitos and the Signature Key Lime Pie Martini, with a Graham
Cracker Rim. Mala
is a workshop for Mark where after 35 years in the kitchen
he is cooking foods that he loves not only for their freshness and taste and quality but
for the health of the body as well.
